Um bife à parmegiana light (ou filé a parmegiana) parece algo impossível? Essa é uma receita de Bifes à parmegiana light que vai surpreender você, tanto pelo sabor quanto pelas poucas calorias, neste caso são menos de 350 calorias por porção! Além de usar muçarela e presunto light, é claro, essa receita substituiu o tradicional e calórico processo do bife à Milanesa por uma alternativa mais leve e saudável que você confere a seguir:
Vamos à receita dos Bifes à parmegiana light
Ingredients
- 450g de filé mignon (3 bifes)
- 1/2 lata de tomate italiano (o ideal é comprar sem pele e já picado)
- 3 fatias de muçarela light
- 3 fatias de presunto light (cozido sem capa de gordura)
- 35g de fécula de batata (maizena)
- Sal a gosto
- Pimenta-do-reino a gosto
- 1 clara de ovo
- orégano desidratado a gosto
Method
Step 1
Tempere os bifes de filé com sal e pimenta-do-reino a gosto.
Step 2
Passe cada um dos bifes pela clara de ovo batida e em seguida cubra-os bem com o amido de milho. 
Step 3
"Frite" os bifes (5 a 7 minutos de cada lado) empanados no amido de milho em uma frigideira com revestimento antiaderente sem usar nenhum tipo de óleo ou gordura. Frite-os até que estejam crocantes de levemente dourados. 
A aparência pode não ser a melhor, porém garanto que a textura e o sabor ficarão muito próximos a um bife à Milanesa tradicional.
Step 4
Tempere o tomate italiano sem pele com sal e pimenta-do-reino a gosto. 
Step 5
Espalhe o molho igualmente sobre os bifes já em uma forma e prontos para ir ao forno. 
Step 6
Coloque sobre o molho uma fatia de presunto e sobre ela uma de muçarela, por fim salpique um pouco de orégano.
Leve ao forno (na potência máxima) por 10 minutos ou até que o queijo esteja gratinado. Sirva em seguida:
Curiosidade
O que muitos não sabem é que a receita dos Bifes à parmegiana é Brasileira e não italiana. A receita foi criada em São Paulo, claro, com muita influência da colônia Italiana existente por lá. O prato também é conhecido como filé à parmegiana quando preparado com filé mignon de boi ou frango à parmegiana (filé de frango à parmegiana) quando o peito de frango é usado no lugar do filé. Outro nome menos usado para o parto é “Bife ensopado com queijo ralado”, usado em poucas cidades do interior de São Paulo.

Gostei deste bife light e sem glúten, é tudo que busco no momento pois além de cortar o gluten também gosto muito de bife a parmegiana. De fato, esse prato não é italiano, a parmegiana italiana é com beringela, o que por aqui chamamos de lazanha de beringela. Vou dar uma vasculhada no blog pois acho que tenho bastante a aprender por aqui.
