Então, sabe aquela história de “casa de ferreiro espeto de pau”? Pois é, dia 06 de fevereiro foi aniversário do meu amado Chef e lá estava eu bem quietinha esperando que ele resolvesse sair para jantar fora quando dou aquela “cutucada” e ele responde que quer ficar em casa mesmo e me pede só para comprar um vinho.
E a comida maluco? E ele responde que qualquer coisa nos viramos com uma pizza! Aí feriu meus brios e pensei que tinha que restaurar a dignidade perdida. O problema é que já era quase fim de tarde e não dava tempo para fazer nada muito elaborado.
Tirei da manga uma carta antiga, ou melhor uma antiga receita que vi no Programa da Ana Maria Braga (é isso mesmo, tudo mundo tem os seus defeitos!) e já tinha feito algumas vezes e gostado muito do resultado.
Ela chama de Costela Urgente, eu fiz uma adaptação livre pensando no tema amor (por ele, claro) e na praticidade. Aí virou a minha costela do Adão Moderno.
Explico. Primeiro veio a questão de que Deus fez a mulher a partir da costela de Adão. Acho estranho mas…. já vi de tudo nessa vida!
Então nessa simbiose completa, o casal abrigado no seu paraíso podia fazer aquela costela, marinhada por dias e assada por horas e horas…
O tempo “ruge” como dizia o outro e o Adão atual não tem tempo não; assim como eu. Daí vem a receita um pouco adaptada (cuja fonte é original é http://anamariabraga.globo.com/receitas/costela-urgente.html) que você confere aqui para celebrar o amor etéreo inclusive aquele despendido à uma boa gordurinha!
Vamos à receita da nossa Costela suína na panela de pressão
Ingredients
- 1 e 1/2kg de Costela de porco
- 1 xícara de chá de catchup (240 g)
- 2 colheres de sopa de suco de limão (1/2 limão médio)
- 1/2 xícara de chá de vinho branco seco (120 ml)
- 1/2 xícara de chá de mostarda escura (120 g)
- 1 colher de sopa de açúcar mascavo
- 1 colher de chá de molho de pimenta
- Sal a gosto
- Alecrim a gosto
Method
Step 1
Coloque na assadeira a costela de porco congelada e leve ao forno alto por cerca de 10 minutos. Retire do forno e com uma faca afiada corte a costela em pedaços médios (3 ossos aproximadamente).
Step 2
Numa panela de pressão misture todos os ingrediente e em seguida "banhe" cada pedaço de costela nesse molho e os distribua com os ossos virados para cima. Feche a panela e assim que ela começar a chiar marque 40 minutos.
Step 3
Abra a panela, verifique se a costela está macia (caso não esteja deixe por mais 5 minutos). Coloque os pedaços da costela em uma assadeira com o osso para baixo e leve ao forno a 180°C e vá regando com o molho que sobrou na panela sempre que secar. A receita original determina que você deixe assando por cerca de 15 minutos mas como gosto da costela bem tostadinha, deixo assando de 40 minutos a 1 hora. Sirva acompanhada de vegetais cozidos e um bom purê de batatas.
