Essa receita a Hanna resolveu preparar para comermos assistindo o jogo Brasil x Argentina (quartas da Copa América 2019). A ervilha e o milho estão na receita mais pelo verde e amarelo do que o gosto 🙂
Trata-se de um risoto de arroz arbóreo com sobrecoxa de frango caipira desfiada, cozido em um caldo de legumes caseiro + caldo do cozimento das sobrecoxas.
É trabalhoso? Um pouco, mas o resultado final ficou divino.
Ingredients
- 4 sobrecoxas de frango caipira
- 1 cebola grande picada em cubos pequenos
- 50 gramas de alho poró em rodelas finas
- Salsão a gosto
- 1 cenoura picada em rodelas
- 2 pedaços de abóbora
- 350 g de arroz arbóreo
- 1 colher de sopa de manteiga
- 2 colheres de sopa de azeite
- Cebolinha picada a gosto
- 1/2 lata de milho verde
- 1 xícara de chá de ervilhas congeladas
- 1/2 limão espremido
- 1 xícara de café de saquê mirim
- Queijo parmesão ralado para servir
Method
Step 1
Tempere as sobrecoxas com sal, pimenta do reino e metade da cebola picada, limão e deixe marinando na geladeira por cerca de 1 hora.
Step 2
Em uma panela de pressão deixe o azeite esquentar e acrescente o frango temperado. Deixe dourar bem.
Step 3
Acrescente o salsão, a cenoura, abóbora e alho poró e doure mais um pouco.
Step 4
Cubra os frangos com cerca de 2 litros de água e deixe cozinhar depois que pegar pressão por 15 minutos.
Step 5
Em uma panela de boca larga coloque a manteiga e frite a cebola até dourar. Refogue em seguida o arroz arbóreo até os grãos ficarem esbranquiçados. Acrescente o saquê e deixe evaporar o álcool. Desligue o fogo e reserve.
Step 6
Abra a panela de pressão, retire os frangos e desfie. Reserve.
Step 7
Passe o caldo que restou na panela de pressão num chinois e reserve numa vasilha.
Step 8
Ligue o fogo da panela de arroz e cubra com o caldo. Vá cozinhando o arroz, mexendo sempre e acrescentando uma concha de caldo sempre que secar. O processo leva em torno de 18 minutos.
Step 9
Prove o arroz e assim que tiver cozido, acrescente o frango desfiado, o milho, as ervilhas (eu costumo ferve-las antes) e a cebolinha picada.
Step 10
Desligue o fogo. Acrescente 1/2 xícara do caldo, deixe a panela tampada por cerca de dois minutos. Sirva com queijo parmesão ralado.
