Sous-vide pork tenderloin
Diferente do filé mignon bovino, o mais caro dos cortes de boi, o file mignon de porco é uma carne muito barata, em alguns lugares é o corte de primeira mais barato que existe.
Acontece que a carne de porco tradicionalmente está associada à pratos gordurosos, pesados e calóricos. Se você perguntar a alguém se gosta de carne de porco as primeiras palavras que virão à cabeça da pessoa provavelmente serão: costelinha, torresmo, bisteca, pernil e talvez lombo (o menos gorduroso entre os cortes citados).
Na prática muitos não a menor graça comer uma carne de porco magra e assim o filé suíno sucumbe à lei da oferta e da procura. O que é bom já que podemos comprar uma carne incrível a um preço excelente!
E hoje vamos prepará-la de forma a extrair todo o seu valor, no sabor e na textura.
Vamos à receita do nosso Sous-vide pork tenderloin
Ingredients
- 2 filés mignon suíno
- 2 litros de água (para a salmoura)
- 200g de sal*
- 1 colher de sopa de molho de soja
- 1/2 colher de sopa de cominho (em pó)
- 1/2 colher de sopa de curry (em pó)
- 3 folhas de louro
- 3 dentes de alho (triturados)
- 1 cebola pequena (ralada)
- 1 colher de café de noz moscada (em pó)
- 200g de cogumelo portobello (cortado em lâminas)
- 2 colheres de sopa de azeite
- 1 colher de café de pimenta-do-reino (em pó)
- 2 copos de água (para a marinada)
- 1 colher de sopa de farinha de trigo
- 1 colher de sopa de manteiga
Method
Step 1
Dissolva o sal na água e deixe os filés de molho nessa salmoura por 1 hora. 
Step 2
Seque bem os filés e espalhe o azeite por toda a superfície. Tempere-os com o alho, metade da cebola ralada e pimenta-do-reino. 
Step 3
Aqueça bem uma panela funda e com fundo grosso, frite os filés apenas para selar por no máximo 3 minutos. Vire-os de 30 em 30 segundos para garantir que selou toda a superfície dos filés.
Step 4
Para preparar a marinada misture o restante da cebola, o curry, o cominho, a noz-moscada, o molho de soja e as folhas de louro com dois copos de água. 
Step 5
Embale os filés (juntos) a vácuo junto com a marinada. 
Step 6
Cozinhe os filés embalado por duas horas a 58°c.
Step 7
Terminado o cozimento retire os filés da embalagem e reserve-os enrolados no papel alumínio dentro do forno desligado. Preserve o caldo.
Aqueça uma panela no fogo baixo e derreta a manteiga. Assim que estiver derretida acrescente a farinha e mexa até dourar (estamos preparando um roux). Acrescente então o caldo da marinada e os cogumelos. Cozinhe até engrossar para então acertar o sal e a pimenta.
Step 8
Sirva o filé coberto com o molho de cogumelos.

Oi Jorge. Eu usei nessa receita o mignon suíno, conhecido também como filezinho ou lombinho suíno. Cada um costuma ter entre 300 e 400g.
