Você deve estar achando que ficamos loucos ou que não entendemos nada de culinária (e geografia), afinal de contas quem em sã consciência sequer pensaria na possibilidade de existir um salmão no Mar Morto?!
Na verdade esse prato foi batizado (pela Hanna) com este nome devido à salmoura na qual o filé de salmão fica marinando por quase uma hora. De tanto sal o salmão boia e por isso a referência ao Mar Morto (para quem nunca ouviu falar no Mar Morto deixo um link aqui).
Na verdade essa receita não é nossa, depois da receita do ovo poché perfeito, essa é provavelmente a mais popular receita que utiliza a técnica do sous vide. Trata-se de um salmão praticamente cru que foi marinado em uma solução de sal e açúcar e depois cozido a apenas 40°c por uma hora. A combinação do tempo em que ficou marinando (o que amaciou a carne) e do banho em água morna (estamos falando de apenas 40°c) cria uma textura única e acentua os sabores naturais de sua carne.
Para preparar este prato você vai precisar de um termocirculador ou então um termômetro e muita paciência para manter a temperatura a exatos 40°c.
Vamos à receita do Salmão do Mar Morto (salmon mi cuit)
Ingredients
- 600g de filé de salmão
- 200g de sal refinado
- 100g de açúcar
- 1.5 litros de água
Method
Step 1
Misture a água, o sal e o açúcar. Adicione algumas pedras de gelo para garantir que a temperatura da água permaneça baixa. Coloque então o filé de salmão para marinar por 45 minutos na geladeira. 
Step 2
Agora vamos selar à vácuo o salmão em uma bolsa plástica que suporte o cozimento, cuidado para não aplicar muita pressão e danificar a carne.
Step 3
Regule o termocirculador a 40°c.
Cozinhe o salmão por 1h sempre a 40°c.
Step 4
Passado o tempo do cozimento retire o salmão, ainda embalado, do banho-maria e o resfrie em uma tigela com água e gelo por 5 minutos. Deixe o salmão descansar na geladeira (ainda na embalagem a vácuo) no mínimo por 24 horas antes de servir acompanhado de um bom creme azedo.
Dica
Você pode servir este prato como acompanhamento, uma entrada ou mesmo no café da manhã. Hoje ele foi o nosso jantar, acompanhado de creme azedo e batatas fritas crocantes, a receita dessa batata está logo abaixo:
